I went 980 Pro because of my past positive experiences with Samsung drives (owned 960, 970 and now 980 NVMEs and SATAs) and the fact that they've been in the SSD business for way longer than WD, they make their own controllers and NAND, do enterprise, etc.

I'm assuming this is for mostly casual use? If so, you are probably going to want one of those Logitech keyboards where you don't need to charge it for like 3+ months.
I've used the Logitech G613 for a couple of years before switching to a smaller keyboard, it gets my recommendation, if you're okay with a no-frills keyboard that lasts forever, which I assume you are. Corsair K57 is another solid pick, if you're about that RGB life, as is the Razer BlackWidow V3.
Above that there's the premium Logitech G915, below mostly cheap membrane keyboards and value combos from the likes of Logitech.
Mouse ... there's plenty. Logitech G305 is a brilliant rodent, if you have smaller hands. Cheap too.

Yeah, Logitech has the best battery life for wireless kb&m out of all the popular brands, so they are a good default. Some models have better battery life than others, but I don't know their lines enough to know which ones to choose, so definitely listen to Zabo and others for that.

If you are looking for something ergonomic and wireless, well, the two that I have tried are the Evoluent Vertical Mouse (https://evoluent.com/) and the DXT Mouse (https://www.dxtmouse.com/). Neither are cheap, though.
Keychron K10 is also worth looking at, if you can find it in stock. Quite a few different versions to choose from, brand is well-regarded.

Logitech G Pro X Superlight impressions: feels as light as my glorious, despite being slightly heavier. Shape is good, although I think my (tiny) hands are a bit better with the glorious minus ones. But what the fuck. This is not USB-C? Are logitech living in 2016 still? It's a shit cable as well. Also the software to update the mouse and set dpi (can only be done through the app, no dedicated dpi button i think?) is fucking shit.

I had every intention to make a charger for the G Pro wireless ... but I feel like there's no point to it. The mouse last for what feels like weeks on a single charge (rgb puke off) and takes like 30 mins to fully recharge.
Micro USB charger ports give me anxiety. That’s enough reason to want a dock that charges wirelessly

Apparently, Windows sets some settings and never changes them if it detects a CPU change, so you would need to do a re-install.

I would probably wait to install Win11 until you get the new mobo and cpu just to minimize Windows re-installs. You aren't missing out on much, anyway.
