Check that it’s set to prioritise the temperature limit and not the power limit. My 1080 will happily run to 90 degrees if my fans are on low and I have it set to power limit.
As far as fan configuration goes, just make sure they are all blowing in as close to the same direction as possible and that there are no unnecessary obstructions.

To get the timings in nanoseconds for your RAM, download and install the Thaiphoon Burner application. Freeware version is ok.
You will have to click a button at the bottom of the report to show timings in nanoseconds before you do a complete html export. That export can then be imported into the Ryzen DRAM Calculator. Select your memory rank, desired DRAM frequency, the BCLK value you are using, and the number of DIMM slots in use. Then, click the 'Calculate SAFE' button and all the values you need will be generated.
You mainly only need the settings on the 'Main' tab, but the 'Advanced' one can have some important ones, too. The VDDP voltage, primarily.
e: don't forget to use the troubleshooting graphic that comes in the same zip file as the calculator, in case you have issues. it isn't too hard to figure out what to do and helped me out a ton yesterday

They are noticeably faster than the SATA drives that are half the cost.

You need to look at how the drive sends information to the computer to get an idea of what the max possible throughput is. Right now, they are mostly split up into two tiers: SATA and NVMe. SATA is limited to ~600 MB/s while NVMe uses PCIe 3.0 4x, which can get up to 4 GB/s.

I need a better term to describe it, but basically as far bog standard 2.5inch SSDs, your Samsung 850/860 Evos, your Sandisk, your Crucial MX300/500s. The Crucial M.2 MX500 is faster than them, and it's cheaper than many 2.5inch SSDs and significantly cheaper than NVMe drives and other M.2s in the UK/Europe currently.
A Samsung 860 Evo 500Gb 2.5' is around £20-£25 more.
The Adata SX8200 is roughly £40 more for a 512Gb NVMe

I'm not overly familiar with Prime95, other than it's a proper torture test and hardly indicative of a worst case real-world scenario. I haven't tested my CPU (7700k) with it, but I'm fairly certain that my temperatures would land significantly higher than what AIDA64's stress test gets me.
It's probably just inadequate cooling, shit thermal paste, insufficient airflow, etc. What are you using?

Can you not mount the fan slightly higher up the heatsink? Or is too high for the case?

are you sure you put the h100 on correctly? Are you sure it's pump is running? It's looks exactly like a cooling failure.
To be clear, I didn't put it together, SCAN UK did. I'd assume they're competent but who knows. They also did the overclock up to 4.8GHZ.

8700k turbos up to 4.7Ghz, right? Those temps seem reasonably in line with an all-cores @ 4.8Ghz overclock to me.

Or you could go through the bullshit and get an B350/X370 board and an upgrade kit. Possibly even get one that's new stock and not need the upgrade kit.

Probably best off to leave it as is, but if you ever fancied spending an absurd price on two fans. You could get 2 sterrox 120mm Noctua's and their 120-140mm adapters for it.

Fair enough. Still trying to wrap my head around power supplies. Will 450w really be enough for a ryzen 5 2600 system with a gtx 1070? What about in the the future if i upgrade to like an 1170 or something? Also, what's a good case for the Auros x470 motherboard? Need something that's a decent size and has space for optical drives.
