For example, "Tales of Dunk and Egg" is a spinoff novel which plays about 90 years earlier, as far as I renember, and would really work great as filler material.
It's alot more straightforward than the other books in the main series.
There aren't as many characters and plots going on at once, basically just two characters.
Really great novel and it would work really great.
To answer your question about the source material, well they rushed nearly everyones arc and cut so much content and characters, there is barely anything left.
Plus they changed some storylines really heavily, so it's hard to tell in which direction they're gonna go.
Heavily changed were Brienne,Sansa, Boltons, Theon,Stannis, Davos, Dorne (all the characters).
Characters where a big chunk got cut and they rushed everything were Arya,Jon and Tyrion (it's hard to tell, in the books he isn't in Mereen or at least not at Danys side).
The only one who still got a bit of material left is Arya, allthough that isn't much as they cut alot of it.
Stannis material also got changed alot, the actual attack on Winterfell hasn't happened, he got Theon and his sister in custody, he didn't burn Shireen (Melisandre is at the wall and he refuses to burn anybody) and Davos is somewhere else (not even close to the wall or Stannis).
And as they cut like 5 more characters that play a role in the book and got their own chapters, they might introduce one or two of them, the rest wouldn't make much sense anymore.
The only character that is partly spot on is Cersei, allthough the whole sex scene with Jaime had a total different meaning in the books.
There is a bit of material left her ongoing suspicion and plan to set up the Tyrells.
Oh and Brans material is also spot on, that's why he wasn't in the show.
I mean they changed alot during his journey in S4, but that's it.
There isn't much happening where he currently is...

They could've chopped the entire thing down to a dense 4 or 5 episodes, and the audience would've been more pleased, even if the bank accounts of all the producers, writers, directors, actors, etc, wouldn't've.
Dorne was a wretched waste of time. The only character to accomplish anything was one we'd already met (Ellaria). It also featured probably the worst scenes in the history of the show.
The entire King's Landing subplot lead to one naked walk, at the end of which was the Undead Mountain everyone knew was coming. Margaery? Loras? Who fucking knows?
Nothing really happened in Meereen other than some amateurly choreographed sword fights and an uncontrolled dragon flight back to the territories of season 1. At least they mercifully united Tyrion and Daenerys more quickly than the books - only to even more quickly disunite them.
Stannis sat around Castle Black seemingly for months devouring all their food, then trudged halfway to Winterfell before he'd consumed all his own food, then attempted to right the sustenance imbalance by turning his daughter into a fire god's food, and finally, barring Pod's intervention, became worm food.
We spent at least half of our Night's Watch watching Olly give dark looks, another quarter watching Sam bore us some more, and only a quarter doing anything interesting, all courtesy of Jon Snow's sword - and all that good will for us only got him a knifing from his comrades. At least our false-bastard Lord Commander will get a resu-erection from Melisandre next season.
The only subplot for which I actually liked the pacing was Arya's. Many-faced assassin school shouldn't be over in a fortnight. The slog was suitable. And despite every reader grousing about the reuse of the Jaqen actor, it was earned in the final scene. Actors, too, are just masks.

Stannis needed the rest of the Northerners on his side. They still aren't down for the Boltons after the Red Wedding, and would have rode with him. Unfortunately, he didn't have the time to rally them together. And with his rent-a-goons dipping, understandably, after watching him burn his daughter, he really should have cut his losses and tried to head back to Castle Black.
