Things like Rabbit and Venison are delicious, but shouldn't be included because they're just not common enough. Buffalo is probably as good if not better than beef for roasts as an example, but it's hard to find for the average person.

Paprika, salt, pepper
Sear each side for 1:15min in a cast iron (2:30 total)
Then flip it again, put in oven at 425F for 3min, flip it for the other side for another 3min
Should be done in < 9mins and get perfectly cooked chicken thighs.
When roasted I put it in a balsamic, olive oil, maple syrup, whiskey, honey, soy sauce mixture. Then put on lawrys, paprika, cinnamon, herbs de provence and pepper (each side use a fork to flip) put it at 400 for about 40-50 min depending on amount and size of the things. I would do skillet searing if I wasn't cooking like 10 at a time.

This makes the conversation more challenging to me. Overall I like pork more than beef (or all other proteins really) because of it's versatility, but enjoy a properly cooked prime rib eye better than anything. Even at a fish level, I love Salmon raw but not so much cooked, and where would I include something like Halibut cheeks? That shit is super rare unless you go fish for the fuckers lol

I posted this in the cooking thread, but you can actually Sous Vide chicken at lower than 165 internal temps as long as the temps are held solid for a specified amount of time. I think at 150 degrees you need to hold the chicken there for 30 minutes before it's sterile enough for consumption.
