The two teams go head to head in the categories selected (i saw those in the league settings page).
And the person that wins the most number of categories wins the match up?
Is it only for the stats the players involved, post on that particular day? (the day of the match) Or for their "last game" prior the match?

What matters is category wins.
For example, the fantasy week starts on Monday and ends on Sunday. Let's say I am facing Adam this week. Because Adam is weak and not manly and is an america-hating animu moelord, i win all but 1 category. So, my record is now 8-1. That is what goes in the W-L column after week 1. Next week I play Dominican and destroy him because Yankees fans are awful people, 7-2. My record is now 15-3.
So you see, each category is like its own seperate game, instead of the week's matchup being the game. That way categories become more important individually, rather than just winning the weekly matchup. If the winning the weekly matchup were the only thing that mattered, then a 5-4 win would then count the same as an 8-1 win.
Last year my first time ever doing Fantasy Sports. I didn't know shit and was learning midseason and still some how got the best regular season record for the season. You will be fine.
The goal is to just dominate in as many stats as possible in the week. You want to be able to stagger your players so that you can have as many available players possible and bench those that do not play that day.
You will be fine. Just remember to line up your players for the day and hope your players are not stupid and commit bad turnovers, low FT% or FG%. Someone like DeAndre will give you a lot of blocks and rebounds, but his FT% and some other numbers can tank you for the week so it is important to draft around that and not have too many one dimensional players unless you really need a certain stat and can give up another for it.
