You don't break multiple scoring records in one season just smashing them against the lower-table clubs - at least not in Italy. Hell, he only had one hattrick all season, and it was the final match. Consistency, my love - he's found it with Sarri's assistance.
Higuaín has always been consistent. I don't really care what anyone else says, his scoring record speaks for itself.

He's definitely had his peaks and troughs (he didn't score in - what? - the first 8 or 9 matches of the 2014-15 season), but not this season. A stretch never arose in which he lost form. Not too many footballers can claim that sort of consistency over that length of time - especially not strikers.
Higuain played on a completely different level than he's ever played before. The records attest to that.
