Meals to cook over the weekend for the week.

Hey SLAENT,
As someone who comes home exhausted every day from work, what are some easy (healthy) meals that I can either prepare ahead of time, or at least takes very little effort for during the week, I've been cooking some Sunday sauce on the weekends and then some pasta during the week, or picking up some Publix rotisserie chicken and cooking some green beans. But I'd like some more ideas.
Suggestions? :)

Make a stew. Simple Beef and Potatoes , and buy a loaf of thick bread.

Pasta Sauce is great. We usually make a large pot full and freeze a large portion and then save a little in the fridge for the week.
Meatloaf is good leftovers and makes great sandwiches for lunches etc.
Chili Colorado:
This recipe is cheap and has a ton of leftovers for freezing. It's also fucking bomb.
6 Dried Ancho Chilis (stemmed and seeds removed)
3 Dried Pasilla Chilis (stemmed and seeds removed)
4 cans beef stock (maybe more ... I usually eyeball it or add as needed)
3 pounds beef stew meat (you can substitute pork if it's cheaper.)
Ground Cumin
Ground Chili Powder
Salt / pepper
2 Bay Leaves
3 Cloves garlic
- Bring the 4 cans of beef stock to a boil. Once boiling remove from heat. Add dried chilis and let steep like a tea. (steep for about 30)
- While chilis are steeping, cube and then brown the beef stew meet in a separate pot with salt and pepper.
- Add tablespoon of Cumin, chili powder, garlic and bay leaves to the meat while browning. (remove from heat if chili aren't done steeping)
- remove 3/4 of the beef stock from the steeping chilis and add to meat. Simmer meat for 30 minutes on medium.
- After meat has simmered for 30 minutes take remaining stock and puree the steeped chilis. Add this to the beef / stock.
- cook on medium
I like my stew meat cooked for a good long time to make soft. Think 3-4 hours of slow cooking. If it has reduced too much and the meat hasn't cooked enough add more stock. If the opposite is true, the meat is good and soft but the chili hasn't reduced enough add corn starch.

^^^ sometimes my wife and I will smoke a whole chicken and use it over the week for lunches as well.
Oh also you can throw in veggies/starches with the thighs (onions, potatoes, carrots etc), just be sure to cut them up small enough and use a proper pyrex pan or something to keep the juices from going everywhere. It's one of my favorites because the prep time ain't that crazy and you just leave it to sit in an oven for about 40 minutes.
+1 for stews and chili. They actually taste more flavorful the day after cooling down and sitting in the fridge. Both freeze well too if you want to think long term.
A slow cooker is your friend. You can even prepare things the night before, then just turn it on in the morning and have a great meal waiting when you get home.

Thank you for all the tips everyone! I have a croc pot, but I haven't used it much to be honest, so I'm definitely going to looking into some of these recipes and ideas for some slow cooked goodness.
