It depends on release schedules, trends, how saturated the market is with that genre or how hungry it is for it, and marketing as well as trending news in gaming.
Stuff below 75 is usually not worth your time, though there are absolutely exceptions there as well. But the point is that there is no inherent difference in quality between an 85 and a 95 on Metacritic, what either score should tell you though is that it's worth your time to try read a few reviews fully to see whether the game seems like your type of thing or not.

It would seem obvious that sites like that would have at least some influence on sales themselves, and they're obviously a decent barometer for determining the success of a product in exciting the reviewers qua intermediary marketers.
