I actually don't do microwaveable. I just get Barilla now (or whatever is on sale). I usually scoop up the "protein" kind if it's on sale since I'm a vegetarian and all. Before I did that, I used to love Pasta Roni. It's usually a dollar on sale, has all the seasonings included (you'll need milk/water and butter/oil). And although I would always make it on a stovetop it's microwaveable. Not Healthy but super flavorful.
Homemade pasta sauce is kinda my family's thing. My father immigrated from Italy and his mother taught my mother how to make her sauce. Though my mom makes it spicier and now my wife does as well. You can freeze the sauce after it's cooked for reheating later.

If you know how to shop, you can do quite well. I can get 10 lb bag of potatoes for like $1.00 or maybe $2.00 That's a lot of side dish meals (though granted, that's a lot of potatoes if you're single)
Salads are very cheap. Lettuce, cucumbers, Shrooms, green onions, tomatoes, and anything else can be $5-10 for an entire week's worth. And you don't need to buy a dressing. Simple dressings that are very inexpensive in the long run. Olive Oil and Balsamic (add 1 clove garlic). lemon, salt, oil. Cheap, healthy, good. Mustard, mayo, honey works too.
Use your freezer to stock up on proteins on sale. When whole chickens go on sale for like $0.65/lb I buy 2. It's like $3 or whatever for a whole fucking bird! That's a lot of meals. Chicken packs go on sale, buy and freeze. Or you can make chicken soup.
Pork goes on sale often, too. You can usually buy enough protein to last 4 meals for under $4 total.
When butter goes on sale, stock up.
Ground turkey goes on sale for $2.50, I buy two! I try not to freeze everything (fish, steak). But when salmon hits $6/lb, buy a 6 oz portion and you have a protein for under $3 and with white rice and salad, the entire meal is under $5.
Key is to shop smart, stock up when certain things are on sale, etc. I grow my own basil which also helps ($3 plant last me a year if I treat it right). You can grow your own tomatoes in the summer too, if you have an area for it (look up topsy turvy for those without a yard!).
Stock up on cereal sales!
Buy some fruits/veggies based on the season and sales (sometimes asparagus is $1.99lb so buy it then).
And finally, if you really need to save money, shop at the 99 cent or dollar stores. Here's a "hack." The pre-packaged salads they get are identical to the ones you get in the big chain groceries. Same quality. They're cheaper because they get whatever the chains don't buy. Same with things like English muffins.
Only things that sucks to buy if you're in need of cash are things like eggs and red meat since I don't know what's going on with eggs in Cali and the red meat is due to a drought. But most everything else goes on sale once every 4 weeks and you just need to time it.
It's really not hard to eat healthy for cheap, but it can be a bit time consuming.
Oh, and FWIW, Eggo waffles are not struggle food. They're like $2.50 a box on sale which isn't very cheap when you consider what you get (you can get a whole loaf of wheat bread for $2 to make toast for a lot longer). I buy them because on weekdays I don't have time to make pancakes with my eggs and quite frankly I like eggo waffles.
Oh, and McD good god I hate that shit. I make my own sausage mcmuffins! And breakfast burritos. I use salami for the meat in those, usually. Mmmm.

Hnggg I really wish we had "Some" Sukiya/Yoshinoya/Gyudon restaurants in the Midwest. Good, cheap, quick, and you don't feel like you put utter poison in your belly. I miss Japan :(.

Completely disagree. Food is about as subjective as it gets though so ...
I like spicy though. Which is something most Latin American food fails at competitively. Cuban food is like this for me. My in laws are Cuban too.
Peruvian is also less common and more expensive. In so cal Mexican is super common so you can find a great deal easy.
