Cook some rice, brown your meat(s) of choice, add celery, onion, and bellpepper, then season to taste (which is usually the "family secret" part of the recipe).
It's used a lot in fundraisers in South Louisiana because it is so damn easy to cook amounts of. Get a giant cast iron pot, like a witch's cauldron, fill the pot up, stir with a boat paddle (wood or metal).
Like many Cajun recipes, it was originally created by and for rural people that were farmers and had some source of meat on hand. I've had chicken, beef, pork, rabbit, squirrel, alligator, shrimp, and crawfish as the meat filler in jambalaya before. It's literally whatever animal meat you have available.

Yeah I get there's not a lot of true American dishes but the exclusion of Creole / Cajun or some American BBQ items had me almost immediately ignore the entirety of the list. I'm partial to Gumbo myself / and smoked brisket.
