1. Run the demo.
2. Change the Window Mode to "Windowed".
3. Save the change, and then quit the game.
4. Now, go to Documents > My Games > FINAL FANTASY XVI DEMO > Steam > 76561198110374875.
5. Open the "config.xml" file in Notepad (or equivalent application).
6. Look for v="1920"/><height_ v="1080" (this="" will="" have="" your="" resolution="" instead.)="" 7.="" change="" the="" resolution="" to="" an="" ultrawide="" super="" ultrawide="" one="" e.g.="" v="3440"/>
