lots and lots of cooking things are bullshit that people just assume they are true and nobody ever tested it.
that's why i love Kenji, he actually tests out shit like this.

I'm not using that obscene amount of butter, but I'm still using some butter to bast at the end of a steak. It does taste good and you can use the butter to finish off a little pan sauce.
I think the one that seems to make sense, but is absolutely bullshit is that "you seal in the juices by getting a good sear on the meat".
No, you don't. You get a get a good juicy piece of meat by buying and cooking a good piece of meat. The searing adds flavor via the maillard reaction, but that's all it's doing. You're burning proteins and sugar and melting delicious fat creating flavor.

I like how he basically goes, βyeah the differences are super minimal and can be further negated by spooning butter and herbs on during the rest, but Iβm gonna keep basting anyways for surface tempβ
Well it does actually cook the sides.

part of me always suspected this.
just wait until you find out about 'room tempt' before putting it on the pan.
basting does give it some nicer even colour though, especially on the sides. which imo makes it well worth it.
By WoodenLung Go To Postjust wait until you find out about 'room tempt' before putting it on the pan.Usually use a mix of olive oil and butter because butter too expensive to use like that but now that olive oil jumped in price, I don't know π

By i can get you a toe Go To PostI do room temp basically incidentally cause I just let the steak be seasoned for a bitI season and put in the fridge usually. I do take out 15 mins before cooking tho. Do the same with chicken too
By blackace Go To PostI season and put in the fridge usually. I do take out 15 mins before cooking tho. Do the same with chicken tooDone this as well depending on how rushed I am or no, kitchen is pretty cold temps mode any given time of the year so I'm not worried about stuff being out a bit.
For me the best thing I've done for steaks is sear and oven or reverse and make sure it's a nice pan that keeps an even temp even if the burner (like say electric) situ sucks
A friend of mine swears by cooking his steak in the oven (after searing the sides) because it preserves flavor and juiciness.

Never understood the obsession with steak. It's bottom tier meat for me, which is fine I'll still eat it but I don't understand the hype.

a "reverse sear" is much easier and more consistant. you cook it in the oven first to the perfect temp and then you sear it in the pan for a nice crust.

I've done the reverse sear a few times but I rather just do it all in the pan. Sear the sides and than let it slowly cook on a lowwww setting with some foil on top.
By FortuneFaded Go To PostI'm backtracking slightly on this opinion because what I meant in my post is that in restaurants that serve a variety of dishes, the steak is often the worst choice. However, a great steak is still great.

i've read this before, but i don't believe.
have tried to prepare it while not on room temp. it did not go well.

So this should be fun for couples.
