1. The Adana meet is prepared using a mezzaluna, it's evident by the texture of the meat when cooked. Has a "rice" texture when chewed, meaning it breaks in your mouth into small pieces. This is key. The meat is hand prepared.
2. There seems to be the correct amount of fat, the meat is from the fat of the tail of a lamb. If the Adana doesn't contain tail fat of the lamb, you can walk away immediately.
3. Salt and pepper, and maybe some sumac flakes. That's it. No other ingredients are required when marinating the lamb.
4. It's cooked on charcoal, of course. You can tell from the tomato, it's cooked on charcoal.
5. That's a proper village-style looking rice, simple, buttery and tasty af.
If you have any kebab related questions, let me know. I love a proper Adana. I can't wait to go to Turkey and have one, it's the first meal I'm eating when I land. It's almost impossible not to be out of shape eating this food, hence why many Turkish men have bellies.
