He doesn’t know only English, he knows Italian, Spanish, French, etc.I’m not sure what you’re trying to argue, because that is the meaning of ‘I know only English’: that I don’t know any of those other languages. Or are you trying to stretch the usage of ‘know’ in this case from ‘know how to communicate through’ to something like ‘know about the existence of’? I do not think Dean was trying to claim the latter, but, even if he was, his sentence structure still wouldn’t be correct.
I don’t know what languages Dean actually knows, so I’m not making a truth claim about the sentence; but I do know that Dean was trying to claim that he knows only English, not any other languages, in which case the proper sentence structure is ‘I know only English’ or even ‘I know English only’.

Regardless, what you’re quibbling about is all a result of modifying ‘know’, rather than ‘English’, with ‘only’. I never suggested one should use ‘I only know English’, even if I can recognize its meaning.

I'd love to say we'll definitely give him a proper run out next season. He's only 20 but he's had some good cameo appearances this year, and Tuchel seems to like him.
