Am I missing out by not watching S2/3 of The Bear? I really enjoyed season 1 but it just ended so cleanly that I didn’t feel like it needed any continuation.

Carmen takes over a restaurant and it’s debt, pretty much every character shows growth throughout their arc, they find seemingly enough money to get out of debt at the end.
It all felt tied up nicely to me. A great series with a satisfying ending.

A great season. A satisfying ending for this part of the journey. They've come across a mysterious amount of wealth that will seemingly get them out of debt and build the restaurant into more than it ever could have been. I see that as a jumping-off point for the next chapter in the story. How does this collection of characters handle newfound wealth or opportunities? They're already moving forward with changing the name from "The Beef" to "The Bear." That makes the mind race about the possibilities of what is yet to come. A month or so ago when I watched the first season I was ready to see what was next. I don't think that's because I was aware of 2 seasons being available to me. It's because the story being presented clearly allowed for a follow-up.
Season 2 does that.

People criticizing S3 The Bear for being meandering and not forwarding the plot much aren't wrong. All things considered, there's not a huge amount of momentum, though I really did appreciate a lot of what the season did do. They fleshed out a lot of characters here like Tina and Natalie and (e10 spoilers) Carmy finally got some kind of closure with Fields and McHale is terrific in this role btw. Think it sets up S4 to have lot of stakes, at least.
While I'm not prepared to say it is particularly good, Acolyte is better than my low expectations of it. It certainly looks expensive and uses actual physical sets and effects.

Whole series was awful, so many nonsensical endings that they just seemed to pull out if their arse.

The main villain dude is actually fun too.
Have yet to watch episode 6, so far the only really good episode has been 5.
1-4 was very much what I've come to expect from these SW shows in terms of writing and plotting, although admittedly it's not nearly as offensively bad as Boba and Obi Wan.
Some nice moments here and there like the one with Trinity and I keep waiting for the Squid Game guy to turn into a not-nothing character.

SW Acolyte is by far the worst entry to the franchise so far. Well maybe the book of Boba Fett was worse.

yeah this season of The Bear was good but it's still the weakest of the show so far

I usually binge watch The Bear but this season was a slog, could only do an episode a day. I pretty much fast-forwarded the entire pregnancy episode.
