Lobster is tough to prepare same with crab. If they aren't wild and fresh or prepared properly they can become rubbery and taste just ok.

I was appalled at how bad the roads were up there when I went to my cousin's Maryland graduation

It's hilarious because you can tell when you drive into Maryland from Virginia on the same freeway without reading the signs. I think it's I495 where its a different universe once you cross state lines.

Ikijime method is a great way to humanely dispatch fish and prevent stress hormones from ruining the meat. Then again my idea of fishiness is probably very different from yours.

Oily fish will be more fishy in general. Mackerel for example. I bet Kib would like anchovies. We used to go fishing and feed the birds with the left over anchovies from the bait tank . Unless my grandfather came. He kept em fried em and eat em whole.

For me, the difference in taste between wild caught and farm grown fish matters more. Especially if they are caught in an environment similar to home because the taste reminds me of the rivers and oak trees and moss, etc.

If you really want the the best, you need to find out which chefs are cooking where and when. The best ones often move around every few months, iirc.
Also, you will want to try Creole style gumbo ("originated" in NOLA) and Cajun style (more of a "country" style) because they will taste quite different.
