That's why i hate when people say i don't like chinese food (or indian for that matter). Bitch that's like a million different things. Obviously they mean the stuff that people in the west know but still
British is criminally underrated, game dishes, steak and kidney, full English, fish and chips, beef wellington.. but more so for game. Although I dont know thats a strictly British thing. Also some of the best restaurants in London would class themselves as modern British so means quite a wide range of things for me and I associate it with the best meals I've ever had.

the philosophy is to make the most out of the little they had, most dishes only have like 1-2 ingredients. it's blue collar food.
As far as make the most of what you have and blue collar goes, anyway.
e: Creole would be something like the white collar version of Cajun. Not a perfect comparison, but close enough.

Ethiopian and Indian are probably my favorite to step out of the house for. Just huge portions and rich flavors. Sociable settings; good with people too.
Japanese probably the most consumed because sushi places are everywhere, and have the best happy hours and drink specials.
Despite luau roasted whole pigs being incredibly delicious, Hawaiian stuff isn't my favorite. Ate a ton as a child and not much holds up outside of poke.
Raw oysters and bottomless martinis are probably my death row meal.
