Some of the best dishes I've ever eaten are some of the most stripped back. Italian food is is insanely good when done correctly, you can walk into most cafes in Milan and get a meal borderline world class.
Italian food doesn't have many ingredients but they take time and care with there processes and you can really taste it.
I mean French are the gawds but I enjoy Italian more for everyday life.
