I wouldn’t even blink at that tbh. Your card consumes an extra 30-40w over a 2080Ti, but I ran the latter with a 9900K on a 600w unit without ever having an issues.
If you insist on the upgrade, I’d go with the RM series PSU.

There’s no shame in going the pre-built route, you can get some deals that way.
If you’re happy to follow stock trackers and get lucky, you could get an FE card for the RRP. For building your own PC currently, it really is just GPU shortages and prices fucking things up. Plenty of CPUs going around and pricing has been competitive, DDR4 is still pretty cheap, etc.
Outside of an FE card at RRP, I wouldn’t bother though because the prices on AIB cards are just absurd.

Other than Alder Lake, is there anything else cummy on the horizon? Saw something about consumer DDR5 RAM the other day which will no doubt be imperceptible from DDR4 for most things.

Disassembly complete. This thing's got a lot of tiny screws (36 in total, but you only have to remove like 15 to get to the guts).
Microsurgery is underway. Outcome uncertain.
Operation successful, plastic fat has been trimmed, new switches and wheel encoder installed.
Stock skates replaced with Corepads.
Final weight check.
I was hoping for -10g, but I'll take -5. I could've removed some more plastic from the internal support structure, drilled the base or 3D printed a honeycomb replacement, but I didn't feel like bothering.
I can definitely feel the difference, probably a combination of the weight reduction and new skates. The Kailh switches feel and sound sensational compared to the stock Omrons, scroll wheel seems snappier, but I'll have to test it for longer to see if it still gets stuck in between steps.
All in all a flawless success.

Sorry, but this is a bit out of my realm of experience and can't think of a good option off the top of my head. You could maybe look at Intel NUC options and see if you can just buy a kit (should just be a motherboard with a soldered-on CPU).
