Might sell both my current monitors and spring for this one (or a freesync variant, if and when there is one), if the price is right. I'd love a proper HDR monitor, but until a self-emissive tech that's suitable for monitor use comes along ... I'm good with occasionally lugging my PC to the OLED.

It is not worth it to upgrade unless you are ok upgrading to something like a 1660 Super or similar. Nothing else is really worth the money with all the new releases coming out soon-ish that should be sizable upgrades from previous gen. Especially on the GPU front.

I think it's still the Acer X27/Asus PG27UQ. Me and horse have the former, Smokey has the latter.
Not sure I'd actually recommend it at this point though, there's definitely better overall options that cost less. Samsung and LG both have some really nice high resolution ultrawide monitors for instance that are cheaper. There's also a lot of cheaper 4K options that, although missing some features, are also like half the price while still offering 4K/120hz/gsync.
There's also some other 4K options if you wanted a larger screen. The obvious high end pick at the moment is an LG CX OLED, but there's also some 43-48 inch monitors too.
All that said, what kind of budget do you have and what is your intended use for it?

Personally, I'd say just go with an LG CX and a 3000 series card when they're readily available. Purely from a value and picture quality standpoint, I think it's a better buy than any 4K monitor currently. Plus it saves on having two separate screens/set ups if you were to move the PC/PS5 from one to the other screen.
Definitely not ideal for typical desk set up though.
Second pick would be an ultrawide, like the 49 inch Samsung Odyssey G9. Which is 5120x1440 @240hz, HDR10. I don't think consoles will play too well with it though, you'll either have black bars at either side or a stretched out picture.
Third pick would be an Acer X27 or Asus PG27UQ. I've got a lot of good things to say about my X27, had it two years now, but it's a lot of money for a small screen, there's caveats to using it at 120hz or 144hz and the fan in it will likely annoy you. Even if you can't hear it (you def will), it's a thing that does need to be dusted and cleaned from time to time.
I also don't believe it'll work with console's adaptive sync. Though, I've used a PS4 and switch on mine and I'm happy with the picture quality despite the non-native res.

Though I’m kinda with you, generally I don’t like big screens for games. 25-32 inch has always been my preference.

Because the display can vary its refresh rate to match the output of the device (instead of being locked) you get the get the advantages of vsync (no screen tearing) without the downsides of increased input latency.
Variable refresh rate. Imagine having all the benefits of vsync with none of the input lag. Vsync buffers 2-3 frames to prevent screen tearing. All the vrr technologies don't add additional frames to the buffer to prevent screen tearing.
FreeSync is AMD's implementation of it. It is cheaper because it does not require as much additional hardware / software as gsync. Any modern gpu can take advantage of FreeSync, IIRC.
Gsync is proprietary and only works with Nvidia gpus. It requires additional and propriatary hardware and software inside the display in order to function, leading to its higher cost.

I have had an Intel 660p 2TB drive for about a year now. Use it mostly as my game drive. It only recently dropped from 100% lifetime left to 99%. Yeah, QLC endurance should not be a worry for most people.
And I don't really transfer large amounts of data, either, so the SLC cache it uses is never a problem for me.

Freesync: Officially compatible with AMD GPUs and unofficially Nvidia GPUs
Freesync 2: An updated version of Freesync, same compatibility as above
G Sync Compatible: A freesync implementation officially certified to work with Nvidia GPUs
G Sync: Only compatible with Nvidia GPUs
G Sync Ultimate: G Sync with more features beyond VRR
