didnt pay attention in the tutorial, but its basically guard with R1 and immediately press R2 once the attack connects, right? Is there any advantage to it vs just parrying with R2?

The dark souls equivalent of an open world quest would be some awkward NPC making a vague mention of something in a whispered voice and that's that. Then I suppose there'd be the expectation to keep that in mind while exploring.I'd kind of like a *bit* more juice out of the squeeze if you know what I mean.
2. Any meaningful mechanical changes that evolve beyond Dark Souls besides the mount and traversal additions? Does it play nearly exactly like Dark Souls mechanically? Sekiro's combat evolutions have been superb for example. I would consider Bloodbourne's evolution from Dark Souls to be fairly stark in terms of combat (weapon forms, guns, etc).

15 is very low. First phase is easy but once he starts getting ridiculously aggressive for an early boss it's hard to deal with his long combo. So you either commit to a very long fight or get rekt. But yeah, there's so much to explore and everything to the south of him is pretty fucking easy as far as Souls games go so go level up a bit. There's a TON to do before you have to go near him :D
The UW stuff just keeps getting dumber and dumber. Turns out if you select your native UW resolution, it will actually render the game at that resolution, but From decided to put black bars on it. So it's not like it's just an oversight, they are actively blocking it off with black bars.

For a short while it is defo worth following the golden lines that come out of bonfires, some key items are locked behind a couple of the early ones and are 100% worth going for asap.

It downloaded and I’ve played some more. I can’t get online though despite having an open NAT type. I get a “network status check fail” every time.
Explored a bit though, found a cave full of wolves and magic’d the fuck out of the boss inside it. Carried on up the road, met the Emerald Herald at a grace and got the horse, then rode past a big giant and some guards. Then I realised I wasn’t raised to be a coward so I turned back and killed all the guards and the giant.
Carried on exploring, until I got hit by a cannon? That had me fucked up at first because I couldn’t see where it was firing from. Pushed onwards anyway, killed all the guards until I got to the next boss. Can’t remember the name but I gave it three tries and now I’m calling it a night.
Good game, might be the best open world game since BOTW.
