There's only boss that made me feel like I would die in one hit or quick combo, but I also pumped the fuck out of vitality from the start.

you probably know all of this already but I'll just type it out just in case
parry is super effective against aggressive and fast mobs (like say Ancestral Followers and the crucible knights), you can even stagger some if you just block their swing (perfect for guard counters). We're kinda encouraged to absorb blows here rather than avoid them altogether
Don't neglect your VIT, people are unintentionally making glass cannon builds in ER lol
Waves of Darkness weapon ash always catches invaders lmao. That 3rd wave on delay makes them think it's over, then they catch it, get staggered, stunnlocked with the following 2 Greatclub swings lol

Only consistent way I dodged it was running away immediately when she starts the wind up, that should dodge the first flurry.
Dodge into her second flurry and strafe to avoid the last bit.
But really luck. The move is bullshit.
